Getting a toddler to eat greens can be a challenge to say the least. But this was one recipe I created where most of the greens went in her mouth and not on the floor–a success in my book! Not to mention that with a few quick adjustments it makes an elegant and easy appetizer for entertaining.
I ordinarily use komatsuna, but you could also use spinach or arugula. Mix with pasta, and you have a battle-free way to get your child eating green!
Served as an appetizer with proscuitto and a dab of mascarpone cheese
